Inspecting the Temperature Probe
Some locations may choose to do this procedure on a more frequent basis (i.e., quarterly, semi-annually, or other frequency).
Inspect the temperature probe for damage. If the probe is damaged or broken, replace it with the correct part. A damaged probe can lead to inconsistent cooking issues and intermittent temperature fluctuation.
There are two probes for KFC units depending on which control board is installed in the fryer: Fastron or SMS. Fastron probes are not interchangeable with SMS probes.

Drain and discard oil from vat.

Visually inspect the temperature probe.

The probe should be clean and straight. If not, replace the probe.

If the probe is not bent or damaged continue with the adjustment.

Adjusting the Temperature Probe
Fastron probes are set to a fixed depth into the vat.

Use a probe gauge or ruler to set the SMS probe to a depth of 5/8”.

Adjust the depth if needed by loosening the compression fitting on the probe and sliding the probe either in or out to the correct depth.

Then, tighten the probe’s compression fitting.
