Cleaning the Vat
- Ensure the filter pan is empty of hot oil and remove, then set aside.
- Turn the main power switch off, and then push the Oil Disposal Shuttle (ODS) as far back under the fryer as it will go, ensuring the ODS aligns with the fryer’s drain.
- Open the drain valve one half-turn so the oil drains slowly and doesn’t splash into the ODS.
- Allow to drain for a few minutes, then slowly open the valve to the fully open position.
- Close the drain valve when the shuttle is full. Do not overfill.
- Discard the oil using the ODS. Repeat steps x and x as necessary until the vat is empty.
- Remove the filter and screen assembly from the drain pan. The filter union could be hot, handle with care.
- Ensure the drain valve is fully closed, and then place the fry basket in the vat.
- Place the drain pan with lid under the fryer.
- Fill the vat to the level indicator with hot water, and then add 4 ozs. (0.12 liters) of open fryer cleaner to the water and mix thoroughly.
- Use Clean-Out Mode or turn the main power switch to the ON position and set temperature to 195°F (90.5°C).
- When the solution reaches 195°F (90.5°C), turn the main power switch to the OFF position.
- Let the cleaning solutions stand for 15 to 20 minutes with the power off.
- Using the open fryer brush (never use steel wool) scrub the inside of the vat.
- After cleaning, open the drain valve and drain cleaning solution from the vat into the drain pan and discard.
- Replace the empty drain pan, close the drain valve, and refill the vat with plain hot water to the proper level.
- Rinse down the vat using clean, hot water.
- Thoroughly dry the vat, drain pan and components, fry basket, etc. making sure all the parts that contact the new oil are as dry as possible.
- Replace the clean filter screen assembly in the drain pan, replace cover, and install drain pan under open fryer.
- Refill the vat with fresh oil.
