Overview
Below is the Scope of Work required for changing the drain seals on the drain heat exchangers on the Smart / Classic Combi Oven.
Henny Penny recommends the gasket connecting the stack to the vent pipe be changed during this procedure.
Procedure

Pump out the water from the trap using the relay test (K24) in the service level.

Shut off power at breaker.

Remove left side panel.
-
Disconnect power, water, and drain. (If there are two water supplies, mark them for correct reattachment.)

Remove the following items and mark the hoses for correct reattachment:

Dyna steam solenoid
-
water fill solenoid Y12
-
T1 transformer
-
wave clean up pump M16 (identify wires)
-
solid state relays
-
hose reel assembly
-
-
Remove drain assembly with rubber boot from bottom.

Lay Combi on back.
-
Remove flat cover panel.
-
Remove M24 pump and mark wires and hose connection.
-
Remove drain box cover assembly.
-
Mark depth of heat exchanger and vent pipe for proper positioning on assembly.

Remove quenching thermocouple from vent pipe to avoid damage.
-
Disconnect vent pipe free from stack.
-
Disconnect vent pipe from heat exchanger and from heat exchanger to drain.

Remove all seals and clean to remove all grease and carbon.

Install seals in swaged end, lightly lubing the inside with liquid soap.
-
Attach heat exchanger to drain sliding pipe using the mark applied for correct depth.

Attach vent pipe to heat exchanger at the proper position.

Connect vent pipe to stack changing seal, if required.

Now reassemble all pieces removed while unit was on its back. Ensure that the ring seal is not destroyed while mounting the heat exchanger. If you are unsure, remove the heat exchanger and check seal. Use a new one, if necessary.

Place bottom of unit on floor so unit is in correct vertical position.

Continue to reconnect and remount all pieces removed for repair.

Connect water line(s) and ensure they are in the proper location.

Connect power.
-
Turn breaker on.
-
Go into settings and perform a Wave Clean Test to make sure all connections are correct, tight and working properly.
