Daily Start-up
If the oil is below 180° F (82° C), with the Main Power switch in the ON position, the
display flashes START UP and

Melt (Mlt) - Auto melt mode.

Mix (Mix) - Automatic filter to ensure oil is mixed to prevent cold pockets.

Top Off (Top) - Checks to see if oil level is filled to the proper mark. If the unit senses the oil level is low, it completes an Auto Top Off.Always add oil to the Top Off Tank in the morning, and top-off throughout the day as necessary.

Polish (Pol) - The unit completes a polish cycle.

During each stage, the bar graph fills as each stage completes.

The duration of each stage depends on the temperature of the oil at the initial start and the programmed setpoints.

Once start-up is complete, the display goes to the main cook menu and is ready for operations.
The only time the Velocity unit has time to top off is during the start up process. In order for a unit to top off through the ATO (Auto Top Off), these conditions must be met:

Unit at set point
-
Not in a cook cycle or filtration
After the Velocity goes through its morning start up process and a cook cycle, it defaults to a cool mode (250 degrees) until another cook cycle is selected. It will then heat up to the desired set point. This repeated process does not allow the unit time to top off.
There has been software integrated into the control to force the unit after 3 cook drops (FC-22 default setting) to do a Top Off Check. When this happens, only the words “Top Off Check” will display on the control board. The unit is blocking out all other functions, meeting the set point, and proceeding to top the unit off.
No other functions can be done at this time until the unit has completed its check. No buttons can be pressed to bypass this feature.
This is done to help prevent oil from getting too low in the vat throughout the day when cooking. This setting can be changed if so desired in the Programming menu under filter control FC-22.
