To avoid equipment damage, do not clean stainless steel with abrasive tools, abrasive cleaners or corrosive chemicals.

Use a food grade fryer cleaner permitted by local health codes.

As in all food service equipment, the Henny Penny open fryer does require care and proper maintenance. The table below provides a summary of scheduled maintenance procedures to be performed by the operator.

Frequency Procedure
Daily Perform a daily filter on each vat
Daily Clean filter pan, install a new filter pad, lubricate the O-rings. NOTE: Replace O-rings if needed.
Daily Remove and clean the basket hanger
Daily Clean and dry baskets

Daily

Clean and dry night covers, and then place over vats to protect oil from contamination.

Daily Clean the caster wheels
Weekly Clean behind fryer. CAUTION!: Disconnect power by unplugging power cord, to prevent personal injury.
As Required Dispose of stale oil and replace with fresh oil
Quarterly Replace filter pan O-rings
Quarterly Perform the deep clean procedure
Quarterly Tighten the heating element spreader bar bracket and heat probe screws
Annually Schedule service to perform planned maintenance per checklist, contact Distributor.
Every Two Years Replace the filter pan lid gasket
