As in all food service equipment, the Henny Penny open fryer does require care and proper maintenance. The table below provides a summary of scheduled maintenance procedures to be performed by the operator.

| Daily | Perform a daily filter on each vat |
| Daily | Clean filter pan, install a new filter pad, lubricate the O-rings. NOTE: Replace O-rings if needed. |
| Daily | Remove and clean the basket hanger |
| Daily | Clean and dry baskets |

Daily |
Clean and dry night covers, and then place over vats to protect oil from contamination. |
| Daily | Clean exterior of fryer |
| Daily | Clean the caster wheels |
| Weekly | Clean behind fryer. CAUTION!: Disconnect power by unplugging power cord, to prevent personal injury. |
| As Required | Dispose of stale oil and replace with fresh oil |
| As Required | Replace the filter pan lid gasket whenever it becomes cracked, brittle, or otherwise damaged. |
| Quarterly | Replace filter pan O-rings |
| Quarterly | Perform the deep clean procedure |
| Quarterly | Tighten the heating element spreader bar bracket and heat probe screws |
| Annually | Schedule service to perform planned maintenance per checklist, contact Distributor. |
