End of Day Cleaning

At the end of each day, gather the equipment, cleaning items, and PPE needed to clean the fryer. Cleaning the fryer daily is an essential sanitary practice which presents a professional appearance and improves the product quality.

Draining and Rinsing Vat

To avoid personal injury, always wear PPE when cleaning vat and follow instructions on the cleaning solution.

Fire Risk

To avoid fire:

  • Do not allow baskets to impact heating elements.

  • Do not exert pressure on heating elements.

Impact to the heating elements may shift or stretch coils and cause a fire.

  1. Remove fryer baskets to have them thoroughly cleaned.

  2. Skim oil using the wire mesh skimmer; discard the crumbs.

  3. Scrape inside of fryer vat above the oil using metal spatula to remove any buildup. DO NOT scrape the heating elements with the spatula.

  4. Begin filtering oil.

  5. Use poker brush to keep crumbs flowing into drain pipe.

  6. Continue to brush vat.

  7. When draining is done, remove basket rest.

Rinsing Vat

To avoid severe burns, use PPE when using filter rinse hose.

The filter rinse hose and fitting will be hot. Use protective gloves or cloth when following this procedure or severe burns could result.

To avoid severe burns, check filter rinse hose daily. If aging or discoloration is seen, the hose should not be used.

Oil with temperature in excess of 200º F flows through this filter rinse hose. Heat causes the rubber hose to age and deteriorate.

  1. Begin wash cycle by attaching rinse hose and pointing the hose spout into vat. Do not let go of hose.

  2. Select WASH and use the hose to wash any remaining crumbs into drain.

  3. Press STOP when finished rinsing vat.

  4. Carefully remove hose and drain hot oil in detached hose back into vat.

  5. Wipe interior vat walls using sanitation wipes or disposable towel with sanitizer.

  6. Return basket rest to vat prior to filling with oil.

  7. Turn fryer OFF.

Performing Final Steps

  1. Follow daily cleaning procedures for wiping all exterior surfaces of fryer.

  2. Disconnect fryer from power at end of day and leave fryer disconnected overnight.

  3. Take fryer baskets and brushes to sink to wash, rinse, sanitize, and air dry. Make sure baskets are completely dry before returning them to oil.

  4. Place fryer baskets into oil once they are completely dry.

  5. Place night covers on fryer.
