Filtering Theory of Operation
Purpose
Regular filtering of cooking oil maintains quality, extends its life, and improves product quality. Oil filtration processes for the F5 fryer are tracked by the OMS PCB to ensure only one filter operation is performed at a given time. Filter cycles are divided into two types, a Daily Filter and an Express Filter. The Daily Filter is intended to be performed once per day, generally before opening or early in the day, and is a longer filtration cycle. Express Filter cycles are performed during normal operation as prompted automatically by the control system after a number of cook cycles. Alternatively, the user may initiate an Express Filter cycle before being prompted by the control. The F5 filter system also includes related operations such as: deep clean, dispose, drain to pan, fill from pan, fill from JIB, and bulk oil dispose or supply.
