Please see the FlexFusion Combi Oven Installation manual for all waste water connection information. Below are some general points all installers can use when making drain connections:

The drain line running from the oven needs to be a 1.5" diameter for Space Saver ovens, 2" diameter for 6 and 10 pan ovens, and 2.5" diameter for 20 pan ovens - when making the connection to the Combi use a flexible coupler - all drains need to run downhill at a minimum 1/4" slope per foot (no uphill routing is permitted). The drain line should be rated for 203° F.
Typically the water flowing through the drain has a maximum temperature of 176° F. Schedule 40 PVC has been used for this, however over time, if the drain box is not adding cold water as it should to cool the drain water, the drain line distorts from the 200°+ water flowing through it.

If running to an open floor drain, no trap needs to be installed.

If running to a closed drain, no trap needs to be installed. Note: The drain (siphon) box on the Combi is a trap.

If running to a closed drain with a trap, a vent must be installed, otherwise a vapor lock occurs between the trap in the oven and the trap in the closed drain system restricting the flow of water.
