Follow these instructions to replace High Limit "Dual" probe for the CFE-52X open fryer.

Remove hot oil from the fryer.
Turn the power switch off.
Ensure fryer is cool to the touch before moving.
Pull out the fryer and unplug from the power source.
Using a crosstip screwdriver, remove the two screws securing the control and carefully lower forward.
Disconnect the wiring of the control and set control to the side. NOTE: Take a picture of wiring before removing.
If needed, remove the left or right side panel using a crosstip screwdriver or bit.
Access the high limit modules on back wall behind control area.
Disconnect faulty high limit probe wires from module control. (Left Probe = Top Module, Right Probe = Bottom Module)
Remove any zip ties holding the high limit wires.
Loosen the faulty probe from the element bracket using a Torx (T15) driver.
Using a 1/2 inch wrench loosen and remove compression fitting with faulty probe.
Apply high temp Loctite to new compression fitting and install new probe with fitting supplied in kit, pushing the probe all way in.
Insert probe into bracket on element and adjust so that the tip of probe is 1/2 inch out from bracket and tighten.
Tighten compression fitting nut to snug and then 3/4 turn more.
Working in reverse, complete steps 10 through 1 and return fryer to service.
NOTE: Some of the insulation may need to be cut away to access fitting.
