Follow these instructions to replace the Temperature, Level, and Auxiliary probe for the CFE-52X and CFE-53X open fryer.

Remove hot oil from the fryer.
Turn the power switch off.
Ensure fryer is cool to the touch before moving.
Pull out the fryer and unplug from the power source.
Using a crosstip screwdriver, remove the two screws securing the control and carefully lower forward.
Remove ground wire from control using a 3/8 inch socket or wrench.
Unplug harnesses from control and set to the side.
Locate the probe harness and using a small flat blade screwdriver, carefully press in on the pins of the faulty probe. Then, remove from connector.
Using a 1/2 inch wrench, loosen the compression nut and remove the probe from the vat. Make sure the ferrule is removed as well.
Locate new compression fitting from kit and remove the nut, spacer, and ferrule into fitting on vat.
NOTE: Make sure the flared side of ferrule is facing toward the vat.
Install new probe and tighten compression nut to snug. DO NOT OVER TIGHTEN!
Set probe to be even with the end of the guard inside the vat, then tighten compression nut 3/4 more to secure.
Working in reverse, complete steps 8 through 1 and return fryer to service.
