PFE 592 (FAST Controls) to 590 (Henny Penny Controls) Retrofit Instructions

To avoid electrical shock or property damage, move the power switch to OFF and disconnect power.

  1. Disconnect power from fryer.
  2. Remove the FAST controls from the control area.
  3. Label and disconnect the wires to the power switch.
  4. Remove the screws securing the front panel assembly and remove from unit.

  5. Locate the 9-pin connector in the control panel area and disconnect all wires attached.

  6. Remove all wires and the connector from the unit.

  7. Use a small flat-blade screwdriver to remove the wires from the terminal block.

  8. Ensure oil is drained from vat and then use a 11/16 in. crowsfoot or socket to remove the FAST probe from the vat.

  9. Install the 3/8 in. to 1/8 in. reducer in the probe's place. Use pipe thread sealant.

  10. Install the compression fitting in the reducer, using pipe thread sealant.

  11. Slide the ferrule and nut, from the compression fitting, over the new probe, and insert the probe into the compression fitting.

  12. Locate temperature probe through vat wall.

  13. Place gauge against vat wall.

  14. Push temperature probe through until it makes contact with gauge.

  15. Tighten temperature probe in place.

  16. Locate the 15-pin connector in the kit. Use the wiring diagram provided in the kit to connect all the wires of the 15-pin connector to the appropriate components and wires.

  17. Use the large end splice for three wire connections and the small end splice for two wire connections.

  18. Loop the 15-pin connector wire assembly and the probe wires through the inner shroud bracket.

  19. Loosen the end caps of the terminal block and push the terminal block assembly back as far as it will go, and then re-tighten the end cap screws. This is to keep the terminal block from interfering with the inner shroud.

  20. Locate the inner shroud and 3 sheet metal screws in the kit. Loop the 15-pin connector wire assembly and the probe wires over inner shroud, and secure the inner shroud inside the control panel area.

  21. Locate the new front panel assembly. Connect the wires to the power switch and install the front panel to the unit, using the screws removed earlier.

  22. Connect the 15-pin connector and probe connector to the back of the new Henny Penny control.

  23. Secure the new Henny Penny controls in place with 2 screws provided in the kit.

  24. Restore electrical power to the unit and unit is now ready for use.
