Only perform this procedure when the unit is cool or severe burns may result.

Bulb and cap high limits are becoming harder to source. This kit will provide an update to electronic high limits for the OFE 290 and PFE 590 fryers.

Preparing Fryer

  1. Turn power switch off.

  2. Remove oil from the fryer.

    • Verify drain pan is underneath fryer and empty.

    • Using PPE, slowly open the drain valve and allow the vat to empty completely.

  3. Ensure fryer is cool to touch before moving.

  4. Pull out the fryer and unplug from power source.

Removing Old High Limit Bulb and Cap Probe

  1. Lower front display panel. Disconnect wiring and set aside if in the way.

  2. Using a 3/8 inch (10 mm) socket or wrench, locate and remove the bulb and cap high-limit mounting nuts under fryer.

  3. Disconnect wiring from high limit.

  4. If lid is down, unlatch lid, raise it up, and remove carriage from fryer.

  5. Using a crosstip head screwdriver, remove the three brackets holding the high limit and discard.

  6. Straighten the probe out into the vat area. This will allow for easier removal.

  7. Using an 11/16 inches (18 mm) wrench or crows foot, loosen the high limit vat fitting, remove high limit, and discard.

Installing Reset Switch, Probe, and Module

IMPORTANT! Remove the filter pan from the fryer before proceeding to next step.

  1. Using a hole (knock-out) punch, open the limit reset hole on the shroud to 5/8 inches. Insert grommet provided in kit into the opening.

    NOTE: The right-side panel may need to be removed to access the location of the original high limit hole.

  2. Punch out one side of the reset switch box according to best fit and reset access for store.

  3. Using the diagram provided in the kit, wire up the new high limit reset switch and run wires through the switch box. Seat the switch into the box and run the wires through the cover. Screw in the cover to switch box and mount the box using the two 3/8 inches (10 mm) nuts.

  4. Apply white thread sealant to new high limit probe bushing, angle probe and insert into vat. Thread bushing into vat and tighten using an 11/16 inch (18 mm) wrench or crows foot.

  5. Install the new high limit probe into the new mounting brackets on the element making sure the probe sits beneath the temperature probe and snug screws.

  6. Space the high limit brackets evenly, making sure the probe is running through the end bracket hole and is at least 1 inch from the end of the probe and tighten screws.

  7. Using 1/2 inch (13 mm) torque wrench, torque the high limit compression fitting to 32 in-lbs (3.6 Nm).

    NOTE: It is recommended to wire up the module per the new wiring diagram prior to installing it in the fryer.

  8. Using a 5/16 inch (8 mm) wrench, attach module to bracket as shown.

  9. Wire Module per wiring diagram. High Limit wires should be on the left side.

  10. Using the existing hole on the frame on the inner right of the fryer, screw in module using the two self-tap screws provided.

  11. Finalize the complete wiring into the power wires if not completed yet per the new wiring diagram.

  12. Working in reverse order, complete step 1 in Removing Old High Limit Bulb and Cap Probe section through step 1 in Preparing Fryer section and return fryer to operation.
