Drain all oil from vat.
-
Disconnect power to fryer.
-
Allow pot and heater elements to cool enough to handle.
-
Remove left side panel from fryer.
-
Remove the top high limit thermocouple probe and all mounting hardware for both top and bottom probe. You may have to remove and replace the bottom probe as well while performing this work. Ensure you replace it with the same PN number. You may have to remove the adjacent fron tspreader plate to allow easier removal. Leave probe plugged into high limit module located behind the control panel.

Clean off any food particles, or carbon build up from the elements, take notice where the probe will be against the elements and spreader plates / brackets.

Remove two screws holding control panel.

Rotate the control panel down and in the slots and allow fyer to hold. The top probe plugs into the lower high limit module behind the control panel and the bottom probe plugs into the upper high limit module.

Ensure the new probes are installed the same way with the pair of white and red wires together.

Use food grade thread sealant to install the new TC high limit probe in the threaded port in the fryer. The probe with the long white RTD lead must be in the top fryer position. The probe without this will be in the bottom position.

Tighten the fitting to the vat, not the compression fitting to the probe at this time.

Position the top probe against the element and the tip 4.5 in. + / - .125 in. form inside of vat.

Lightly tighten the compression nut to hold.

If bottom probe is being installed align the two vertically.

Position the new spreader brackets on the elements and probes, then tighten.
-
Position the bracket over the 45 in. angled portion of the top probe, the bracket will engage and lock around the probe.

Ensure bottom probe gets aligned to slot. Align front of bracket to back and install screws loosely.

Ensure the 4.5in. is still met and bottom probe is equally spaced as top probe.

Tighten both compression fittings at the vat and tighten the two screws holding the brackets / probes together.

Securely tighten screws on new bracket and ensure adjacent spreader plates are properly positioned and tightened.

Route wires into electrical panel in the same location as current high limit wires.

Unplug removed probe and plug in new probe at high limit module.

Ensure the top probe is plugged into the lower module, and the bottom probe is plugged into the upper module.

Remove the "P3" harness from the back of the control panel. Install the two loose ends of the long white cable from the top protection probe into the last set of position in the harness.

Ensure fully inserted and tang is engaged to hold in place.

For some earlier fryers, this position may already be populated with a mid-level probe. This can be disconnected from the harness and replaced with new probe wires. The mid-level probe serves no function.

Ensure all wiring is secure and install the control panel and left side panel back onto the fryer. It is recommended to keep side panel off to ensure no oil leaks if time permits.

Reconnect power to fryer.

Fill vat back with oil.
-
Remove USB cover cap on control and insert USB stick with SW programs.

Save settings to USB for back up is not necessary but could be useful in the event an error occurs.

Load settings from USB (only if needed in event an error occurs).

Power on and test fryer operation.
-
Keep fryer on for a minute or two to test new probe and ensure no leaks from probe fittings to vat occur.
-
Go into info mode and check the sensor "TEMPS". The PPrb is the temperature of the tip of the new protection probe via the white wire and would be very similar to high limit thermocouple, also at the tip. It usually reads hotter than the others as it’s against the heating element (usually oil temp up to 550°F).

Check date, time, and other functions to ensure data is correct. Software version should show on start screen when turning fryer on.
