Troubleshooting the SMS 20 Control Countdown
Overview
Why does the SMS control polish mode timer not start?
Call Avoidance
Verify the proper procedure has been performed per the KFC Standards Library.
There are two things after starting the polish cycle that must happen for the controller to start the timer:

Oil temperature must be at least 300°F and then the SMS control must see a 45°F temperature drop to verify that oil is draining from the vat.

The SMS control then looks for L1 line voltage into wire/pin #4 supplied by the power switch. The line voltage signal confirms to the SMS control that the pump is on.
Procedure
It is possible there is a wiring error or damage that is causing this problem. This wiring error could have occurred during a power switch or pump switch replacement.

Verify the power cord's ground plug is present and plugged in correctly.

Lower the control.

Verify power/pump switch L1 is going to pin/wire #4.
If it is not, then the neutral line is going to pin/wire #4 and the SMS control will not confirm the pump is running.
