Only perform this procedure when the unit is cool or severe burns may result.

To avoid electrical shock or property damage, disconnect power before installing or servicing equipment.A qualified technician must perform the installation.

  1. Pull fryer out away from walls and other equipment.

  2. Drain oil and remove filter pan.

  3. Close all valves.

  4. Remove all electrical power from the fryer.

  5. Remove the left and right-side panel, and then the rear panel.

  6. Remove the two screws and then lower the existing control on the fryer.

  7. Remove the pressure relief assembly by first removing the pressure weight cover.

  8. Remove the pressure relief safety valve.

  9. Remove the pressure relief tube.

  10. Remove the pressure relief valve body.

  11. Remove the pressure relief valve body elbow pipe.

  12. Remove the Steam Box Assembly by first loosing the upper pipe clamps and separate the steam pipe from the steam box.

  13. Loosen and separate the lower steam pipe from the steam box.

  14. Use an adjustable wrench to loosen the solenoid pressure fitting and separate.

  15. Pull the steam box away from the flue until the pipe clears the shroud. Retain the steam box and hardware for reuse. Note, the retaining grommet on the pipe is a friction fit and requires force to remove.

  16. Now to disconnect the solenoid wiring and conduit, remove the pressure sensor clip and cover.

  17. Disconnect the wires form inside the pressure sensor.

  18. Remove the pressure sensor.

  19. Remove the wire conduit from the back of the shroud.

  20. To replace the rear shroud remove the hardware holding the old rear shroud to the fryer's frame.

  21. Remove and discard the old rear shroud.

  22. Apply Silastic sealer (if available) to the lower, inside edge of the new shroud. This is used to prevent oil migration.

  23. Install the new shroud on to the fryer. Reuse the old screws.

  24. Install the hardware holding the new rear shroud to the fryer's frame.

  25. To disconnect the junction box remove the junction box cover.

  26. Separate the wires and reatain the wire nuts.

  27. Remove the junction box from fryer.

  28. Disconnect the conduits from the junction box.

  29. Set the parts aside for reuse later.

  30. To install the compression assembly, position the item on the lower, rear frame.

  31. Use two large self-tapping screws to secure.

  32. Install the compressor cover and secure with two sheet metal screws, one on the top left side and one top center front.

  33. Install the old junction box on the top two front studs.

  34. Reconnect the conduits to the junction box. Note, route away from the oil pump and motor or other sources of vibration. Wire tie if needed.

  35. Reconnect wiring, black to black and red to red. Secure with wire nuts.

  36. Connect the pressure tube to the compressor.

  37. The compressor cover must be installed first before you install the pressure tube.

  38. The pressure tube connects to the compressor with a flat black ferrule compression fitting. Snug the compressor fitting, but do not over tighten.

  39. Use white pipe sealant on all junctions.

  40. Connect the transducer block to the pressure tube.

  41. Connect the transducer to the top of the transducer block.

  42. Connect the transducer wire to the transducer.

  43. Connect the tee to the vat pressure tube.

  44. Connect one end of the deadweight pipe nipple to the top of the tee and then reconnect the deadweight assembly to the top of the tee.

  45. Slide the grommet over the junction elbow tube.

  46. Slide the junction elbow through the rear shroud.

  47. Press the rear shroud grommet into the rear shroud.

  48. Connect one end of the pipe nipple to the end of the tee.

  49. Connect the pressure tube to the other end of the pipe nipple.

  50. Install the wire conduit onto the back of the shroud.

  51. Install the pressure sensor.

  52. Connect the wires to the inside of the pressure sensor.

  53. Install the pressure sensor cover and clip.

  54. Install the steam box to the shroud.

  55. Connect the solenoid pressure fitting and tighten with an adjustable wrench.

  56. Attach the lower steam pipe.

  57. Attach the upper steam hose.

  58. If the fryer's control is older it won't have the additional plug connections for the pressure assist or the required software.

  59. If needed replace the old control with the one provided.

  60. Drill or punch two wiring access holes int he back of the front wiring trough for a wiring run access.

  61. Drill a 7/8 in. diameter hole, approximately 1 4/5 in. vertically below center of the existing hole.

  62. Drill a second 7/8 in. diameter hole approximately 1 1/2 in. horizontally to the right of center of the hole drilled.

  63. Connect the compressor wiring conduit to the hole, so the wires extend through the wiring trough.

  64. Route the transducer wire next to the compressor wiring conduit and cable tie in place.

  65. Install the relay mounting plate to the 12 VDC relay with two lock nuts.

  66. Use two self-tapping screws to install the 12 VDC relay in the wiring tray.

  67. Use the compressor wiring harness to connect the blue spade end of AP2 to the 12 VDC relay.

  68. Connect the blue spade end of AP1 to the 12 VDC relay.

  69. Use the relay wiring harness to connect the blue spade connector to the L1-2 on the relay, and then the yellow spade connector to the L1-2 on the 15 A breaker.

  70. Connect the blue spade connector to L2-2 on the relay, and then the yellow spade connector to L2-2 on the 15 A breaker.

  71. Connect the 3-pin connector to the control panel.

  72. Use the compressor wiring harness to connect the blue spade end of AP2 to the 12 VDC relay.

  73. Connect the blue spade end of AP1 to the 12 VDC relay.

  74. Use relay wiring harness 1 to connect the blue spade connector to N-2 on the relay and then the yellow spade connector to N-2 on the bottom element.

  75. Connect the blue spade connector to L1-2 on the relay, and then the yellow spade connector to L1-2 on the 15 A breaker.

  76. Connect the white 3-pin connector to the control panel.

  77. Connect the 12 VDC (coil) to the control panel by connecting the spade end of the jumper wire to RC2 and RC on the 12 VDC relay (coil).

  78. Connect the red 3-pin connector to the mating port in the access panel on the back of the control panel.

  79. Remove the existing current sensing wiring by disconnecting the orange, red and black power wires from the Secondary Heat Contactor.

  80. Note the labels with colors on the current sensor wiring harness.

  81. Reinstall the new current sensing wiring harness and ensure the sensor colors match with the wire colors.

  82. Connect the red multi-pin connector to the current sensing transformer input ont he back of the control.

  83. Attach the current sensing wiring harness' red, white, and black wires, with red spade connectors to the pressure transducer wiring.

  84. Attach the ground wire to the wire tray.
